Ingredients:
- 2 large potatoes
- 1 tablespoon oil
- Pinch of Asafoetida
- 1/2 tsp cumin seeds
- 1/2 tsp mustard seeds
- 1/2 tsp turmeric
- 2 finely chopped green chilli (adjust to taste)
- salt to taste
- 1 tsp lemon juice
- 1 tsp chopped cilantro
- 1 sprig curry leaves
- Shredded carrot 2tsp
- Green peas 1/4 cup
- Boil the potatoes until they are soft and let cool.
- Peel and cut the potatoes in small pieces.
- Heat the oil in a frying pan on medium high.
- Add the cumin seeds,mustard seeds and asafoetida,curry leaves,chillies.As the seeds crack,add turmeric,potatoes,and salt.
- Stir-fry for a few minutes and add 2 tablespoons of shredded carrots and 1/4 cup of green peas to potato mixture.
- Add lemon juice and cilantro.
- The potatoes should be slightly moist and not very dry.
- Serve hot.
