Aloo masala

Ingredients:
  • 2 large potatoes
  • 1 tablespoon oil
  • Pinch of Asafoetida 
  • 1/2 tsp cumin seeds 
  • 1/2 tsp mustard seeds 
  • 1/2 tsp turmeric 
  • 2 finely chopped green chilli (adjust to taste)
  • salt to taste
  • 1 tsp lemon juice
  • 1 tsp chopped cilantro
  • 1 sprig curry leaves
  • Shredded carrot 2tsp
  • Green peas 1/4 cup
Method:
  1. Boil the potatoes until they are soft and let cool.
  2. Peel and cut the potatoes in small pieces.
  3. Heat the oil in a frying pan on medium high.
  4. Add the cumin seeds,mustard seeds and asafoetida,curry leaves,chillies.As the seeds crack,add turmeric,potatoes,and salt.
  5. Stir-fry for a few minutes and add 2 tablespoons of shredded carrots and 1/4 cup of green peas to potato mixture.
  6. Add lemon juice and cilantro.
  7. The potatoes should be slightly moist and not very dry.
  8. Serve hot.
