Ingredients:
- Coconut milk 4cups
- Tomatoes 2 - 3
- Red chilly powder 1 - 2 tsp
- Mustard seeds 1 tsp
- Curry leaves 1 sprig
- Rasam powder 3 - 4 tsp
- Coriander leaves 1/2 cup
- Salt to taste
- Oil 1 - 2 tbsp
- Chop the tomatoes and keep aside.
- Heat some oil in a pan or a kadai.
- Splutter mustard seeds and then add curry leaves.
- Add the chopped tomatoes and saute it for some time till they are a soft and mushy.
- Now add diluted coconut milk and heat it,stirring it occasionally.
- Add the rasam powder and chilly powder and stir it.
- Let it boil and make sure it doesnt split.
- Add the coriander leaves and let it continue boiling.
- Take it off the stove and then add salt to taste.
- Coconut Milk Rasam is ready to serve
